SKETCH OPENS A NEW WAY OF LIFE IN LONDON...


SKETCH REOPENS WITH A GARDEN MENU, BRINGING ENGLISH STILL AND SPARKLING WINES TO THE FOREFRONT.

As we reopen our doors in 2021, sketch in Mayfair is delighted to announce the launch of the

vegetable-based Garden Menu served in the iconic Glade restaurant and bar; a concept conceived by our Master Chef Pierre Gagnaire, executed by Executive Chef Frédéric Don.


Furthermore, we are pleased to announce that Wine Director Frederic Brugues, always taking bold strides forward to innovate for our guests, has reimagined the still and sparkling wine menu, putting what he believes to be some of the finest England has to offer on the centre stage throughout sketch.

The Glade Garden Menu French Master Chef Pierre Gagnaire, having used the third national lockdown as a period of reflection and experimentation, has listened to our guests’ increasing desire for vegetal produce to be in the foreground of our creations, hence his decision to showcase the finest quality, vegetable-based dishes in the Glade.


Guests can opt between a two and three-course meal. The menu features first courses to awaken the palate, including a Chilled Petits Pois Soup with Verbena, Sweetcorn Ice-cream; Green Asparagus Tart with Tarragon; Aubergine Caviar, Tomato and Rocket Salad...

Main courses feature Cévennes Onion in a Cocotte; Daikon Radish in Blond Beer and Lentils Perfumed with Juniper Berries; Vegetable Lasagna, Reduced Apple Juice finished with Violette Mustard; Spelt Risotto with Fresh Herbs, Egg Poached at 67°C, Veil of Balvenie Whisky; Red Quinoa with Red Beetroot Juice, Spinach Fondue with Diced Apple; Potato Gnocchi with Turmeric, Green Velouté...


For dessert, the first ever trio in the Glade executed by our Executive Pastry Chef Christophe Gasper... A fondue made from Yorkshire Rhubarb, coupled with a Vanilla Crumble, with a Kent-sourced Strawberry and Yorkshire Rhubarb Fruit Salad in Syrup, Burrata and Campari Ice Cream and a Guanaja Chocolate Mousse, Buckwheat Praline and Caraїbes Chocolate Water Ganache...

The two-course menu is priced at £35 per person and the three-course menu is priced at £40 per person. The menu is served from 12pm with the final lunch booking at 3:30pm, available seven days a week.

English Still and Sparkling Wines at sketch, with its increasing expertise, geological diversity, warmer and longer summers, England is the new old world, and a burgeoning producer on the global wine scene. Ever unafraid to break the mould, sketch’s Wine Director, Frederic Brugues, has decided to showcase the best the country has to offer by expanding our offering of English-produced wines throughout all our menus.

“We are committed to making efforts to reduce our carbon footprint and support local economies, which is why we have decided to take our support of English and Welsh wine craftsmanship to the next level in 2021 by moving 20-25% of our yearly volume to English wine producers.” Frederic Brugues


Having worked with the likes of legendary English winemaker Peter Hall of Breaky Bottom for over a decade, and pioneer Jonty Daniels of Astley Vineyard (one of the oldest vineyards in the United Kingdom, based in Worcestershire), sketch is proud to bring the wine directly from farm to glass, supporting family-run and small businesses.


As part of this movement, we are thrilled to be sourcing our pouring rosé from Dedham Vale Vineyard in Essex, our pouring white from Danbury Vineyards in Hampshire, and our pouring red made by the students of Plumpton College in East Sussex, the next generation of winemakers in the country, serving the 2018 Rock Lodge of Plumpton Estate.

It is an amazing achievement for Plumpton Wine Division and our students and thisincredible listing really demonstrates the quality of wines we are producing at Plumpton.”


The reinvention of our wine and sparkling-wine offering would not have been possible without the support of Pommery, sketch’s close partner of 20 years. The pouring sparkling wine served throughout the ground floor at sketch is the Louis Pommery England Brut, the first English sparkler produced by a Champagne house (using Hampshire-grown Chardonnay and Pinot Noir).

about SKETCH

sketch’s home, 9 Conduit Street, was designed by James Wyatt in 1779 and has previously been the headquarters of the Royal Institute of British Architects before later becoming the London Atelier of Christian Dior. On July 17, 1869, pioneering feminist Millicent Fawcett spoke at a public meeting held at 9 Conduit Street calling for the enfranchisement of women. This was the first time Millicent Fawcett had delivered a speech on the subject. She went on to become a champion of women’s equality, a legacy which lives on today as a core principle of sketch’s ethos. sketch was inaugurated in 2002 by restaurateur, Mourad Mazouz, and three-Michelin-starred MasterChef, Pierre Gagnaire. As a destination for food, art and music the Mayfair venue continues to contribute to the building’s heritage as a destination for experimentation.


The site consists of the Lecture Room & Library, the Parlour, the Glade, the East Bar, and the Gallery. The Lecture Room & Library was awarded its first Michelin star in 2005, a second star in 2012. The restaurant was recognised with Michelin’s top three-star accolade in 2019. Over the past decade, due to Mazouz’s commitment to art and design, the venue has hosted works by hundreds of artists - Chris Levine, Ron Arad, Carsten Nicolai, Jonas Mekas, Mary Ellen Bute, Tracey Emin, and more recently, Turner-Prize-winner Martin Creed and nominee David Shrigley as part of its long-term programme of artist-designed restaurant

for the Gallery.


sketch strongly believes that businesses have a social responsibility and is committed to helping local communities with initiatives such as adding £1 donations to every restaurant bill. The funds raised provide support to two organisations with compelling causes, Place2be and Hospitality Action.
